Mellowed for 30 days in French oak before bottling (after filtering back to a clear appearance). Strongly peppery and a bit vegetal on the nose, with little sweetness. The palate then takes you by surprise, with cotton candy, marshmallows, and bubble gum notes, leading to a lingering vanilla finish.
